Method

  1. To make Santa’s Mitten Cookies, put the hazelnuts and a tablespoon of sugar in the bowl of the food processor and process until you have a fine, even powder.

  2. Pour the hazelnut mixture into a medium bowl together with the flour, the rest of the sugar and the cold butter, previously cut into cubes. Start working it with your hands and continue until the mixture is sandy.
  3. Add the egg and the egg yolk to the mixture and knead until the dough is smooth and even. Shape it into the classic block, wrap it in plastic wrap and let it rest in the fridge for about an hour.
  4. When the resting time is up, take the block of dough and roll it out with a rolling pin into a sheet about 3-4 millimeters (1/8 inch) thick. With a mitten-shaped cookie cutter, cut out as many cookies as possible and arrange them on a baking sheet previously lined with parchment paper.

  5. Put them in a preheated convection oven and bake at 180 °C (350 °F) for about 12-14 minutes, or in any case until the cookies have turned golden. Then take them out of the oven and let them cool completely on a wire rack.

  6. While the cookies cool, make the icing. Pour the powdered sugar into a bowl and gradually add the boiling water, whisking constantly to get a thick cream.
  7. Divide the icing between two separate bowls: add a few drops of red food coloring to one and a little white food coloring to the other.

  8. Pour the icings into two disposable pastry bags, snip off just the tip and decorate your cookies: first pipe the red layer, let it harden completely and then go on with the white layer.
