Method

  1. To make the cinnamon cookies, take a medium bowl and mound the flour in it, making a well. Put the cinnamon, granulated sugar, brown sugar, cocoa, baking powder and grated orange zest in the center. Mix all the ingredients well to combine them, then shape them into a well again. Put the egg and the softened butter, cut into small pieces beforehand, in the center. Work the mixture with your hands until you have a smooth, even ball of dough, then let it rest in the refrigerator for 30 minutes.

  2. Once the dough has rested, flour your work surface and roll out the dough into a sheet about 3 mm (1/8 in) thick. Take cookie cutters in the shape you like and cut out as many cookies as you can. Place them on a baking sheet lined with parchment paper and bake them in a preheated oven at 180 °C (350 °F) for about 10 minutes.

  3. Meanwhile, make the glaze by mixing the powdered sugar with the water in a bowl. If you want glazes in different colors, just divide the glaze among several bowls and add a few drops of food coloring to each.

  4. Take the cookies out of the oven and let them cool completely. At this point you can decorate them with the glaze however you like.
