Meanwhile, put the egg whites in a large bowl and start whipping them with an electric mixer on high speed. When they start to turn white and foamy, add 1/3 of the granulated sugar and then, slowly, all of the powdered sugar. When the sugar is well incorporated and the meringue is firm, add the remaining granulated sugar as well, a little at a time, and keep beating until the meringue is very fluffy and glossy.Divide the mixture between two bowls and add a couple of drops of green food coloring to one, stir, and add more if needed until you reach the shade you like. Then transfer the two mixtures to piping bags fitted with flat, smooth tips, arrange wooden skewers on a baking sheet lined with parchment paper, spacing them well apart, and start shaping the white and green meringue trees: leaving about 2 cm (3/4 in) of each wooden skewer free, pipe the meringue in a single ribbon that starts out wider at the base and gradually narrows as you move up toward the tip of the tree.As soon as you’ve finished shaping your trees, decorate them with the sugar pearls and bake for about 1 to 1 1/2 hours, until the meringues are very crisp. Then take them out of the oven and let them cool on a wire rack, and your Meringue Christmas Trees on a Stick are ready to serve. Alternatively, you can dip the base (the side that touched the parchment paper during baking) in melted dark chocolate.TipsTo make sure your Meringue Christmas Trees on a Stick are actually done, just try lifting them off the parchment paper: if they come away easily without sticking and the underside feels crisp when you tap it, you can take them out of the oven.StorageMeringue Christmas Trees on a Stick keep at room temperature, in an airtight container, for up to 1 week.Comments ★ ★ ★ ★ ★ × 5 / 5 You need to enable JavaScript to vote Cancel reply Leave a comment
