Method

  1. To make the Christmas Star Torrone Semifreddo, start by coarsely chopping the torrone with a knife. In a bowl, whip the cream and set it aside; you will need it later. Make a syrup by cooking the sugar with the water in a small saucepan for about 10 minutes, or until the mixture comes to a boil.

  2. Separate the egg yolks from the whites and place them in two medium bowls. Beat the whites with an electric mixer and, when they form stiff peaks, slowly drizzle in half of the sugar syrup, letting it run down the side of the bowl so the mixture doesn’t deflate. Keep beating until everything is combined and the bowl has cooled completely.

  3. Put the remaining sugar syrup back on the heat and, when it starts to boil, pour it into the bowl with the yolks. Beat everything with the electric mixer, again working until the bowl has cooled completely.
  4. Add the torrone to the bowl with the yolk mixture and stir to combine well. Add the whites as well and fold them in gently from the bottom up with a spatula so the mixture doesn’t deflate. Finally, add the whipped cream and fold it in, again from the bottom up, until everything is combined.

  5. Pour the mixture into the star-shaped molds, level the surface well and place them in the freezer for about 3 hours, or until the mixture has set completely.

  6. Once the semifreddo has set, before taking it out of the freezer, melt the dark chocolate in a water bath. Take the semifreddos out of the freezer and unmold them. Pick them up gently, dip them halfway into the chocolate with a quick movement and let the chocolate set on a cooling rack.
