Method

  1. To make the torrone semifreddo, start by crushing the torrone, first with a meat mallet and then in a food processor, until it is fine but not too fine.

  2. In a small saucepan, dissolve the sugar in the water. Put the 3 egg yolks in a bowl and start whipping them with an electric mixer. When the sugar syrup reaches 121 °C (250 °F), pour it into the yolks in a thin stream without ever stopping the mixer.

  3. Keep whipping the yolks until the mixture is pale and foamy and has cooled to room temperature. Now add the crumbled torrone and fold it in from the bottom up.

  4. Chop the dark chocolate with a knife, add it to the cream and stir again.

  5. Whip the cream separately and, once you have added it to the yolk cream, fold everything together well from the bottom up, taking care not to deflate the mixture.

  6. Line some aluminum molds with plastic wrap, fill them well with the cream, cover with more plastic wrap and let them rest in the freezer for at least 6 hours. Once the resting time is up, put the heavy cream in a small saucepan and heat it.
