There are almost endless varieties of coconut truffles: with cream, with ricotta, with chocolate, with cookies… there really is something for everyone. What all these recipes have in common is how easy they are to make, which makes them perfect even for those who aren’t very handy in the kitchen. Just be careful not to confuse them with one of Brazil’s best-known sweets, Brigadeiros, which are made with condensed milk.

To make these coconut truffles you simply need desiccated coconut, sugar, ricotta and dark chocolate. These little coconut sweets are great served as a dessert at the end of a meal, as an afternoon snack or with a good amaro (an Italian herbal liqueur) after dinner. Since you don’t need an oven to make them, these coconut bonbons are ideal for the warmer months, but they’re always welcome in winter too: thanks to their exotic flavor, they’ll bring back happy summer memories and delight young and old alike.

Among our other truffle recipes, we recommend making the Lemon Coconut Truffles, the Truffles with a Hazelnut Center and the Hazelnut Truffles.

Method

  1. To make the Coconut Truffles, first melt the dark chocolate in a double boiler. Meanwhile, combine the ricotta, sugar and coconut flour in a bowl and mix until you have a dry mixture that holds its shape.
  2. Scoop up small portions of the mixture and shape them into little truffles, then dip them in the melted dark chocolate and roll them in the desiccated coconut until completely coated. Arrange the Coconut and Cocoa Truffles on a tray, cover them with plastic wrap and let them rest in the fridge for 1 hour before serving. Variations and Alternatives

You can replace the outer coating of coconut with chopped nuts of your choice, such as hazelnuts, almonds or pistachios. You can also use mascarpone instead of ricotta, in the same amount.

Tips

To make Coconut and Cocoa Truffles, we recommend buying well-drained ricotta, or else letting it drain in a strainer for a few hours before starting the recipe.
