Method

  1. To make the Salmon in Puff Pastry with Spinach, start by cooking the spinach: melt a pat of butter in a large skillet and add the spinach, season with salt, stir and cover with the lid, letting it wilt over low heat for 4-5 minutes. When it is tender, remove the lid and let the moisture cook off well before turning off the heat.
  2. Unroll the puff pastry and cut it in half, prick one half with the tines of a fork and place it in a baking pan lined with parchment paper. Lay the cleaned, deboned salmon fillet on the puff pastry and season with salt and pepper, then cover the salmon with the well-drained, slightly cooled spinach and finally cover everything with the second half of the puff pastry. Crimp a rim around the filling to seal it, and use the puff pastry scraps to cut out shapes of your choice to decorate the top.
  3. Arrange the decorations and brush the top of the salmon in puff pastry with the beaten egg. Bake in a preheated conventional oven at 180 °C (350 °F) for 20-25 minutes, until the puff pastry is nicely golden. Take it out of the oven and serve your Salmon in Puff Pastry with Spinach piping hot. Finally, remember to download our App with exclusive content and fewer ads!

Variations and Alternatives

Salmon in Puff Pastry with Spinach can also be made with frozen spinach and salmon. For the spinach, just let it thaw in a covered skillet, then cook off the moisture and finally add a pat of butter. The salmon, on the other hand, should be thawed completely in the fridge and patted dry before being laid on the puff pastry. Instead of spinach, you can add any kind of greens, as well as sautéed vegetables or fairly stiff mashed potatoes. If you like, you can also decorate the top of the puff pastry with poppy seeds.

Tips

If you really want to surprise your guests with a special Christmas dish, make the Salmon in Puff Pastry with Spinach using Homemade Puff Pastry (which, remember, you can also make well in advance and freeze so it’s ready when you need it): the dish will gain in flavor.

Storage

Salmon in Puff Pastry with Spinach can be kept in the fridge, in an airtight container, for 2-3 days. When you’re ready to eat it, reheat it for about ten minutes in a hot oven.
