Method

  1. To make the Salami Rolls with Russian Salad, first make the Russian Salad: peel the carrots and potatoes and cut them into cubes of about 1/2 cm (1/4 inch). Bring a pot of water to a boil and boil the potatoes and peas for 10 minutes, while the carrots will cook in about 7 minutes. Once ready, drain the vegetables, transfer them to a bowl and season with salt, pepper and extra virgin olive oil, then let them cool completely.
  2. Meanwhile, make the Mayonnaise: in a tall, narrow container, put the egg yolks with the vinegar, lemon juice, salt and pepper and blend everything with an immersion blender. Always mixing in the same direction, start adding the oil in a thin stream, making sure it gets absorbed so the sauce doesn’t split. Once the mayonnaise is nice and creamy, adjust the salt and pepper and set it aside.
  3. When the vegetables have cooled, dress them with the mayonnaise and mix, and you’ll be ready to assemble the rolls. Take a slice of salami, fold it into a cone and, holding it pinched closed, fill it with a generous spoonful of Russian salad. Finally, secure the filled salami cone with a toothpick and garnish with a small sprig of dill. Transfer your Salami Rolls with Russian Salad to a serving plate and bring them to the table. Tips

To make the mayonnaise, use ingredients that are all at room temperature and pour in the oil slowly in a thin stream, letting it be fully absorbed before adding more, so the sauce doesn’t split.
