Mayonnaise is perhaps the most widespread and widely eaten sauce in the world. It’s served with countless dishes, and making a perfect, tasty Homemade Mayonnaise isn’t as complicated as you might think. Three simple ingredients (eggs, oil, and lemon), a little patience, and the mayonnaise is ready.

To avoid Broken Mayonnaise (that is, mayonnaise that doesn’t emulsify properly), always remember to use oil and eggs at room temperature and to pour in the oil and lemon in a thin stream and in several additions, waiting each time for them to be properly incorporated.

If your Mayonnaise does break, though, we suggest reading our guide Broken Mayonnaise: Causes and Remedies, which will give you great Tips and Tricks for Rescuing Broken Mayonnaise.

But which oil should you use to make Mayonnaise? If you want a Mayonnaise with a more Intense, Full-Bodied Flavor, you can use olive oil; if you prefer a more delicate flavor, you can use a good sunflower or peanut oil.

Don’t forget, though, that besides the Classic Traditional Mayonnaise there are several other kinds of Mayonnaise, from Vegan Mayonnaise (perfect for anyone following a Vegetarian or Vegan diet) to Garlic Mayonnaise (perfect with grilled meats), and a tasty, unusual Avocado Mayonnaise (great with fish main courses or for topping tasty Hamburgers).

Method

  1. To make the Mayonnaise, put the two egg yolks (always at room temperature) in a bowl with high sides and add a pinch of salt and pepper. Add a few drops of lemon juice and start mixing everything with an electric mixer.
  2. Start pouring in the oil in a thin stream, in several additions and without rushing: add a little, wait until it is incorporated, and continue. Never pour in all the oil at once, or your mayonnaise will break. As soon as the mixture thickens, thin it by pouring in a little of the lemon juice, again in a thin stream, and continue with the oil until it is used up.
  3. Once the mayonnaise is ready, taste it, adjust the salt and pepper and, if you like, add a little white vinegar and stir. Here is your perfect, tasty Homemade Mayonnaise. Finally, remember to download our App with exclusive content and fewer ads!

Tips

To make Homemade Mayonnaise in a few minutes and reduce the risk of it breaking, I recommend using an immersion blender. Make sure that, at first, the blender touches the bottom of the beaker for the first 10-15 seconds at top speed, until the mayonnaise starts to thicken.

Storage

Homemade Mayonnaise keeps in the refrigerator for 1-2 days at most, no longer.
