Once ready, squeeze the spinach well and chop it with a knife. Put it in a bowl with the grated cheese, the ricotta, salt and pepper and mix everything well.Once the spinach and ragù filling is ready, move on to making the béchamel following our recipe hereNow start making the bundles: cut a sheet of fresh lasagna in half along the long side, put a spoonful of béchamel in the center of one strip of pasta and lay the other strip on top to form a cross.Place a generous spoonful of the ricotta and spinach filling in the center, a sprinkle of grated cheese and finally a slice of mozzarella. Now start closing the bundle by folding the pasta strips counterclockwise, always adding a little béchamel to hold the layers of fresh pasta in place. Now spread a little béchamel over the bottom of a baking dish and arrange your lasagna bundles in it. Finish with a layer of béchamel and a generous sprinkle of grated cheese, and bake in the oven at 180 °C (350 °F) for about 30-40 minutes. Alternatively, if you have a baking dish that fits in the basket, you can cook them in the air fryer at 160 °C (320 °F) for about 20-25 minutes, until the top is nicely golden.Once ready, your Ricotta and Spinach Lasagna Bundles are ready to be served and enjoyed piping hot.
