What’s more, our recipe is a gluten-free pistachio torrone and, by choosing chocolate and spread made with natural sweeteners instead of sugar, you can also make a surprising sugar-free pistachio torrone. Nothing complicated, just authenticity and flavor. I promise this easy pistachio torrone will win your guests over and become an irreplaceable star of your Christmas.

Method

  1. Melt the dark chocolate in a double boiler (or in the microwave) and pour 3/4 of it into the mold, coating it evenly. Use a spatula or a pastry brush to cover the mold completely. Put the mold in the fridge for at least 15 minutes so the chocolate sets. Take the mold out and check that the surface is even. Add more chocolate to any thinner spots. Thicken the rim too, then put the mold back in the fridge for at least another 15 minutes.
Pistachio Torrone, step 1: mold coated with melted dark chocolate
  2. Finely chop 150 g of the pistachios. Melt the white chocolate the same way, then add the chopped pistachios, the whole ones and the white chocolate spread, and stir until smooth.
Pistachio Torrone, step 2: white chocolate mixed with the spread and pistachios
  3. Check that the chocolate in the mold has set completely and pour in the mixture you just made. Level the surface well, then put the mold in the fridge for at least 3 hours.
Pistachio Torrone, step 3: pistachio filling poured into the chocolate-lined mold
  4. Take out the mold and gently run a smooth-bladed knife around the edges to let air in between the mold and the chocolate. This will help you release the torrone from the mold. Gently slide the torrone out of the mold, trying not to touch it, to avoid leaving fingerprints on the surface. If you like, you can add some decorations to your torrone.
