I had lots of white chocolate at home, a gift from a friend, so I decided to use it for this tasty White Chocolate Torrone. This time, instead of pistachios, I used almonds and hazelnuts, coated in the same white chocolate spread that makes everything wonderfully rich. In the other recipe I forgot to tell you that, although the process is of course longer and more involved, this White Chocolate Torrone can also be made in single servings, as small torroncini (mini torrone bars). They’re perfect to give to friends for Christmas. Do you have your molds and ingredients ready? Use a pastry spatula or a brush to coat the entire inside of the pan evenly. Turn the pan upside down and let the chocolate set for about 30 minutes. Check that the coating is even; if it isn’t, add more chocolate. Add a thick layer of chocolate along the edges.Melt the remaining white chocolate as well, then add the white chocolate spread. Stir well, add the almonds and hazelnuts, and stir again. Pour the mixture into the pan until it is completely full, smooth the top, and refrigerate for about 2 to 3 hours.Run a knife along the edges of the pan to remove the excess chocolate and let a little air in. Turn the torrone out onto a platter and very gently lift off the pan.
