You’re in the right place: these Nougat Wafer Bites are just what you need. They’re sweet Christmas snacks made for enjoying on the couch with the tree lights on and a good movie, and they’re also perfect to give to friends as impressive homemade food gifts. The Nougat Wafer Bites Recipe is simpler than you might think: once you have some plain wafer sheets (well-stocked supermarkets should carry them), just follow the instructions to make a quick and easy soft nougat (torrone, the Italian honey nougat) that’s every bit as good as store-bought. All it takes is egg whites, sugar, honey and hazelnuts, and in less than half an hour you’ll have truly amazing homemade torrone.Like the idea of torrone? Put the sugar and honey in a heavy-bottomed saucepan and let them melt over medium heat without stirring.Add the lemon juice and, when the mixture turns lightly golden, turn off the heat and let it cool slightly.Separately, whip the egg white to stiff peaks, then add it to the sugar and honey, mixing constantly with the beaters to get a pale, fluffy mixture.Return the pan to the heat and cook over low heat, stirring constantly, until the mixture pulls away from the bottom of the pan. Add the hazelnuts and give it one last stir to distribute them.Line the bottom of a pan of about 10×15 cm (4×6 inches) with wafer sheets. Pour in the nougat mixture and cover with another layer of wafers, trying to level the surface.Let the nougat rest at room temperature, not in the fridge, for at least 12 hours before cutting it and, of course, tasting it.
