Method

  1. To make the Homemade Soft Torrone, spread the hazelnuts evenly on a baking sheet and toast them in the oven at 100 °C (210 °F) for about 10 minutes, turning them often so they toast evenly.

  2. Take a heavy-bottomed pot and melt the sugar and honey over low heat, without ever stirring, until both have completely melted.

  3. Add the lemon juice and, when the mixture has turned lightly golden, turn off the heat and stir until it is lukewarm.
  4. In a bowl, whip the room-temperature egg white to stiff peaks and add it to the pan with the honey mixture, mixing with the whisk to blend all the ingredients perfectly.
Homemade Soft Torrone, step 4: whipped egg white mixed into the honey mixture
  5. Cook everything over low heat, stirring constantly, and when the mixture starts to come away from the bottom of the pot, add the hazelnuts, stir to combine and turn off the heat.
Homemade Soft Torrone, step 5: toasted hazelnuts stirred into the thickened mixture
  6. Take a rectangular mold about 10×15 centimeters (4×6 inches) and line it with parchment paper. Cut the sheet of wafer paper in half, lay it on the bottom of the mold and pour the hazelnut mixture over it. Cover with the other sheet of wafer paper and gently level the surface with a rolling pin.

  7. Let the torrone rest for 12 hours at room temperature. When the time is up, cut it into pieces of whatever size you like and serve the Homemade Soft Torrone. Finally, remember to download our App with exclusive content and fewer ads!
