Alternatives

The Crispy Parmesan Potatoes are customizable according to your preferences: try them with a mix of parmesan and pecorino cheese, or substitute the sweet paprika for the spicy paprika or chopped aromatic herbs such as rosemary, sage or thyme.

Tips

For this recipe we used new potatoes, but it can also be made with normal potatoes. In that case always boil them in salted water for 5-10 minutes (depending on the size) then let them cool, remove the skin and cut them into chunks. This way they will remain firm and compact and finish baking to perfection in the oven.

Storage

The Crunchy Parmesan Potatoes should be served as soon as they are ready, to best enjoy the crispy layer of cheese. Should you have leftovers, you can still store them in the refrigerator, inside an airtight container, for 1 to 2 days and reheat them in the oven for about ten minutes before eating.
