  1. To prepare Lemon Turkey Escalopes first cut the slices of turkey rump into smaller steaks about 3 fingers on each side, then lightly flour them and brown them in a pan with the knob of butter and a drizzle of extra virgin olive oil. Cook the cutlets for about 3-4 minutes per side.

  2. When they are browned, remove the escalopes from the pan and remove the fat from the pan using paper towels. Arrange the escalopes back in the pan and deglaze with white wine and lemon juice.
