Method

  1. To make the Stuffed Turkey Roll, start by cleaning the mushrooms. Trim the end of the stems, remove any traces of soil and chop them with a knife, not too finely.
  2. Transfer them to a bowl along with the sausages, casings removed, the eggs and the Parmigiano. Mix well, then season with salt, pepper and nutmeg.
  3. Spread the slice of turkey breast out on the cutting board and distribute the filling you just made over it, keeping a couple of centimeters (about 1 inch) from the edges.
  4. Roll it up very tightly and wrap it in a net of kitchen twine, tying the ends firmly so the filling doesn’t leak out during cooking.
  5. Pour a few tablespoons of oil into a Dutch oven and brown the meat, turning it well on all sides. Then deglaze with the white wine, season with salt and pepper and, when you can no longer smell alcohol rising from the pan, cover with the lid.
  6. Let the Stuffed Turkey Roll cook over low heat for about 3 hours, adding a ladleful of vegetable broth or water from time to time to finish cooking it.
  7. Once it’s done, transfer it to the oven under the broiler for 5 minutes to crisp up the outside.
  8. Let the meat rest on a cutting board for 10 minutes before slicing it, and don’t forget to make some roast potatoes to go with it. Finally, remember to download our App with exclusive content and fewer ads!

Variations and Alternatives

For a milder filling, you can use boiled spinach sautéed in a pan instead of the sausage. Its flavor will still pair perfectly with the mushrooms.

Tips

You can also make the Stuffed Turkey Roll ahead of time. Let it cool slightly, then slice it and arrange it in an ovenproof dish, spooning the pan juices over the top. Shortly before sitting down to eat, just reheat it and serve.

Storage

The Stuffed Turkey Roll keeps in the fridge in an airtight container for 3-4 days. We recommend reheating it in a pan or in the oven.
