Italian Stuffed Peppers, also simply called Stuffed Peppers, are one of the classic dishes of Italian cuisine during the summer time and beyond! Easy and healthy, these Stuffed Peppers (🇮🇹Peperoni Ripieni) are a really tasty and hearty dish, perfect for a weeknight dinner or for entertaining guests.

Stuffed Peppers are colorful caskets of Peppers stuffed with a soft and flavorful filling formed from a mixture of Milled Meat, Sausages, Breadcrumbs, Cheese, Eggs and Parsley: a real treat! But if you want, you can also customize the recipe to your liking and make some variations, like the Vegetarian Stuffed Peppers!

  1. To prepare the Stuffed Peppers start by combining the ground meat, crumbled sausage, breadcrumbs, cheese, parsley, egg yolk, whole egg, and garlic in a bowl and mix everything well. Once a good mixture is created, adjust salt and pepper to taste. If the mixture is too firm and dry you can add a few tablespoons of vegetable broth to soften it.

  2. Wash the peppers, dry them well and cut them either on top or lengthwise so that you get a “bowl”. Clean them well inside and fill them with the mixture. Arrange the stuffed peppers close together in a nonstick baking dish greased with oil and bake at 180°C for about 60 minutes. Toward the end of cooking lay the sliced cheese on the peppers. Let the cheese melt and then serve the Stuffed Peppers!

Alternatives

If you want, you can make Vegetarian Stuffed Peppers by simply filling them with Rice such as Saffron Rice or Cheese Rice!

Storage

The Stuffed Peppers should be eaten right when baked, but if they really have to be left over you can keep them in the refrigerator for in a day, obviously sealed in an airtight container. When enjoying them again I recommend reheating them in the oven.
