By now the nuts should be toasted: take them out of the oven and let them cool completely.Wash the apples carefully, slice off the top about one centimeter down from the top of the apple and, using a spoon or an apple corer, remove the core, taking care not to go too deep so you don’t risk breaking the apple.Coarsely chop the nuts with a knife and transfer them to a bowl. Add the sugar, cinnamon to taste, the soaked raisins, squeezed dry, and the cold butter cut into cubes.Stir to combine and use the mixture to fill the apples, pressing firmly but gently. As you fill the apples, arrange them in a baking dish.Add the apple tops to the baking dish as well, cover everything with aluminum foil and bake in a preheated oven at 200 °C (400 °F) for about 35 to 40 minutes.Meanwhile, make the crème anglaise: in a large bowl, combine the sugar and the egg yolk, beating with an electric mixer until smooth and frothy.Pour the milk into a small saucepan, add the half vanilla bean and bring to a boil. Turn off the heat, remove the vanilla bean and pour the milk in a thin stream into the bowl with the egg mixture, while beating everything with the mixer. When the mixture is smooth, pour it into a small saucepan, turn on the heat and keep beating until the mixture reaches 80 °C (176 °F). If you don’t have a kitchen thermometer, turn off the heat when the custard coats the spoon.Transfer the crème anglaise to a large bowl and let it cool slightly at room temperature. When the apples are ready, take them out of the oven and gently transfer them to serving plates.Drizzle them with a spoonful of crème anglaise and cover them again with their tops. Let cool slightly for about 10 minutes, dust with powdered sugar and serve the Stuffed Baked Apples with Nuts and Custard Sauce while still warm.
