Variations and Alternatives

Savory Radicchio, Gorgonzola and Pear Strudel can also be made with Pâte Brisée instead of puff pastry. If you don’t like the strong flavor of gorgonzola, you can replace it with the same amount of stracchino or crescenza. The pizza mozzarella can also be replaced with mild provola or smoked provola.

Tips

For this recipe choose a firm pear that isn’t too ripe, otherwise it may fall apart during baking and release too much liquid. After cooking the radicchio in the skillet, let it cool slightly so it releases its excess water and doesn’t make the pastry too wet. When you close the Savory Strudel, don’t throw away the pastry scraps: you’ll need them to make thin strips to seal the filling better wherever there are gaps in the pastry.

Storage

Savory Radicchio, Gorgonzola and Pear Strudel is best eaten right away, to enjoy the flaky pastry and melty center at their best, but if you have leftovers you can store it in the fridge, in an airtight container, for 1-2 days and reheat it in the oven for about ten minutes when you’re ready to eat it.
