Method

  1. To make the savory gorgonzola and pear strudel, first unroll the puff pastry on a work surface and arrange the pears, peeled and diced, over one half of the sheet. Add the crumbled gorgonzola and season with salt and pepper.
  2. Fold the pastry over the filling and seal the edges, crimping them into a rope. Then prick the surface with the tines of a fork so it doesn’t puff up during baking. Finally, bake the savory pie at 200 °C (400 °F) for about 30 minutes; when it’s nicely golden, take it out of the oven and let it cool for about 15 to 20 minutes. Variations and Alternatives

If you like, you can enrich your savory gorgonzola and pear strudel by adding smoked pancetta or speck (smoked cured ham) to the filling for a more savory flavor. And if you love a bit of crunch, we suggest adding some coarsely chopped walnuts.

Tips

To give the savory strudel a glossy finish, brush the surface with an egg yolk beaten with a tablespoon of milk. This is also a great way to decorate it with poppy seeds or sesame seeds.

Storage

Savory gorgonzola and pear strudel keeps in the refrigerator, in an airtight container, for up to 2 days. Before serving, reheat it in a hot oven for about ten minutes.
