The Savory Asparagus, Ham, and Cheese Strudel is a modern twist on the classic Asparagus Strudel, a typical dish from South Tyrol. Prepared like the traditional sweet strudel but reimagined as a savory tart, this rustic appetizer is perfect for a variety of occasions, from dinners with friends to buffet-style aperitifs.

I’ve experimented with many types of Savory Strudels and I have to say they’ve always been a source of great satisfaction. The strudel is incredibly versatile and can be filled with just about anything: fish, meat, or vegetables. For this reason, it truly is a lifesaver recipe: you can prepare it in advance with whatever you have on hand and serve it whenever needed. If you’re a fan of strudels with bold flavors, besides the Asparagus, Ham, and Cheese Strudel, you can also try a Puff Pastry Strudel with sausage, stracchino cheese, and potatoes, or a Savory Strudel with Gorgonzola and pears!

Ingredient notes: In Italy, this strudel is often prepared with puff pastry as the base, which is easy to find in most supermarkets chilled or frozen. For the cheese, varieties like scamorza, fontina, or taleggio are preferred for their meltability and robust flavor. If you can’t find scamorza or fontina, you can substitute with other melting cheeses such as provolone, mozzarella, or even Swiss cheese. Use thinly sliced prosciutto (Italian cured ham); if unavailable, cooked ham or even smoked ham are fine alternatives, though the flavor will be slightly different. For best results, use fresh, tender asparagus. If asparagus is out of season, you can substitute with thin green beans or lightly cooked broccoli stems, though the classic flavor comes from asparagus.

  1. To prepare the Asparagus Strudel with Ham and Cheese, start by trimming the tough ends off the asparagus. Wash them thoroughly and then cook them in salted boiling water or steam them. It is crucial not to overcook them; they should remain slightly al dente. The cooking will finish in the oven. Once the asparagus reaches the right level of doneness, drain them and let them cool in a colander.

Now, chop the cooked ham into small pieces and mix it with the softened stracchino cheese (simply take it out of the refrigerator 30 minutes before you start working with it) ensuring everything is well combined. Take the asparagus, cut them into pieces while keeping the tips aside, and add them to the mixture of stracchino and ham, mixing carefully to avoid breaking the asparagus pieces you just cut.
  3. At this point, roll out the puff pastry, pricking the center with a fork. On this base, place the mixture of Asparagus, Ham, and Stracchino that you just prepared. Fold the pastry to create the classic strudel shape and brush the top with beaten egg. Now, place the Asparagus Strudel with Ham and Cheese in a preheated oven at 180°C (350°F) for about 30-35 minutes, until the pastry is fully cooked and golden brown.
  4. Once cooked, remove the Asparagus Strudel with Ham and Cheese from the oven, place it on a cooling rack, and let it rest for a few minutes. Slice it and serve it warm. Finally, remember to download our App with exclusive content and fewer ads!

Variations and Alternatives

You can easily substitute the stracchino cheese with other types of cheese, such as gorgonzola. However, be careful with the amount of salt you add to the asparagus since gorgonzola is already quite salty and has a strong flavor.
