The strudel is a preparation that lends itself to virtually any filling, from fish, to meat, to vegetables. This is why it can be considered a sort of “lifesaver” recipe: you can prepare it in advance with whatever you have at home and then serve it when needed. Wash them thoroughly, then cook them in salted boiling water or steam them. It’s crucial not to overcook them; they should be left slightly al dente as they will finish cooking in the oven. Once the asparagus reach the right level of doneness, drain them and let them cool in a colander. Next, chop the cooked ham into small pieces and combine it with the softened stracchino cheese (remove it from the refrigerator 30 minutes before starting to work with it) making sure to blend everything well. Take the asparagus, chop them into pieces while setting aside the tips, and mix them with the ham and stracchino mixture, being careful not to break the asparagus pieces you just created.At this point, roll out the sheet of puff pastry, pricking the center with a fork, and place the mixture of asparagus, cooked ham, and stracchino you just prepared on top. Fold the pastry to create the classic strudel shape and brush the top with beaten egg.
