  1. To prepare Sicilian Stuffed Sardines first clean the sardines: remove the head and innards and debone them gently making sure not to split them in half, then rinse them to remove any residue.

  2. Now prepare the filling: in a large frying pan, prepare a sauté with the onion, then add the pine nuts and the soaked and well squeezed raisins, lastly add the grated penis and adjust the salt and pepper. Toast the filling until the bread has turned a nice golden color, then transfer it to a bowl.

  3. Partly squeeze the lemons and strain the juice, add the sugar and let it dissolve completely. Add the mixture to the filling and mix until soft but not too moist. Spread a small portion of the filling inside each sardine and wrap it around itself like a roulade starting from the widest side. Then arrange the sardines all’inside a baking dish, alternating them with bay leaves.

  4. Sprinkle with a drizzle of oil and bake at 360°F (180°C )for about 15-20 minutes. Once ready, take your Sarde a Beccafico out of the oven and let them cool before serving!

Alternatives
