Method

  1. To make the Salmon and Bacon Skewers, first clean the salmon fillets, removing any bones, then cut them into medium-sized chunks. Wash the limes and slice them, then cut each slice in half again.
  2. Take the wooden skewers and thread on a cube of salmon, a slice of bacon and half a slice of lime, alternating them along the whole length. Heat a grill pan well, brush it with extra virgin olive oil and cook the skewers on all 4 sides.

Variations and Alternatives

You can also cook the Salmon and Bacon Skewers in the oven: just arrange them on a baking sheet lined with parchment paper, drizzle them with a little oil, season with salt and pepper and bake at 200 °C (400 °F) for 10-15 minutes, turning them from time to time. If you like, you can also flavor the skewers by adding some sage leaves or by marinating the salmon beforehand with lemon juice, dill, extra virgin olive oil and peppercorns.

Tips

To make well-cooked, juicy Salmon and Bacon Skewers, it’s important to cut the salmon into chunks of similar size, so they cook evenly. You can use the fillet trimmings to make tasty pasta dishes.
