Method

  1. To make the Red Velvet Cake Roll, start by sifting the flour, baking powder and cocoa into a bowl. In a stand mixer, beat the eggs with the sugar for at least ten minutes, or until they have tripled in volume.
  2. Now add the red food coloring, the flour and the cocoa to the egg mixture and, while continuing to mix, finally add the melted butter and the vanilla as well. Once all the ingredients are combined, pour the batter onto a rectangular baking sheet lined with parchment paper and level the surface with a pastry spatula.
  3. Bake at 180 °C (350 °F) for about a quarter of an hour, and do the toothpick test before taking the cake out of the oven to make sure it is cooked through. Once it is ready, take the baking sheet out of the oven and immediately turn it over onto a sheet of parchment paper sprinkled with sugar, then peel the top paper off the cake. Now roll up the sponge on itself, starting from one of the short sides, and let it cool completely.
  4. In a mixing bowl, whip the cream with the powdered sugar. Then add the vanilla and the mascarpone, mixing everything together until you have a thick, smooth cream.
  5. Carefully unroll the cooled roll, taking care not to break it: spread it with the mascarpone cream, roll it up gently and refrigerate it for at least half an hour. Once chilled, trim the ends to neaten them, transfer the Red Velvet Cake Roll to a serving plate, dust with plenty of powdered sugar and bring it to the table.
