Radicchio Lasagna is a tasty vegetarian first course with a bold flavor and a creamy texture. To make this Vegetarian Lasagna you need very few ingredients: just lasagna noodles, radicchio, Taleggio (a soft cow’s milk cheese), béchamel and Parmigiano Reggiano.

Radicchio and Taleggio Lasagna is a great alternative to classic Baked Lasagna if you are hosting a dinner with vegetarian guests, or simply if you are looking for a tasty way to use the radicchio you have at home.

Baked Radicchio Lasagna can also be made in handy single portions to serve at a buffet dinner or to take to work for a tasty lunch.

If you love lasagna in general, I also recommend trying Mushroom Lasagna and the very unusual Lasagna Toast. And now, here is the recipe for Radicchio Lasagna.

Method

  1. To make the radicchio lasagna, start by washing and trimming the radicchio, then cut it into thin strips. Cook the radicchio with the oil in a medium skillet, taking care to salt it as it cooks. Meanwhile, take the Taleggio and cut it into slices that are neither too thick nor too thin.

  2. Bring plenty of salted water to a boil in a large pot, then add a few drops of oil and cook the lasagna noodles briefly. Once they are ready, drain them and set them aside.

  3. Take a rectangular baking dish and cover the bottom with a layer of béchamel, then lay the pasta on top. Add another layer of béchamel, the radicchio and finally the Taleggio, then sprinkle everything with the Parmigiano. Continue until you have used up all the ingredients, making sure the last, top layer is made like this: lasagna noodles, béchamel, Parmigiano and finally the radicchio.

Radicchio Lasagna, step 4: the baked lasagna
  4. Bake at 180 °C (350 °F) for 20 minutes, then take the lasagna out of the oven and let it cool slightly. Your radicchio lasagna is now ready to serve. Finally, remember to download our App with exclusive content and fewer ads!

Variations and Alternatives

If you are intolerant to eggs or have guests who can’t eat them, you can make an egg-free Radicchio Lasagna with egg-free lasagna noodles or corn lasagna noodles.

Radicchio Lasagna also lends itself to lots of variations. For example, you can make Radicchio and Stracchino Lasagna, Radicchio and Sausage Lasagna, Radicchio and Speck Lasagna, or Radicchio and Gorgonzola Lasagna.

Tips

For an even tastier Radicchio Lasagna, I recommend making the Fresh Egg Pasta and the Béchamel Sauce at home. For a nicer presentation, you can garnish your Radicchio Lasagna with thin strips of fresh radicchio before serving.

Storage

If you have any Radicchio Lasagna left over, you can keep it in the refrigerator for one day in an airtight container. If you used only fresh ingredients, you can also freeze it before baking.
