Variations and Alternatives

If you like, you can add a sprinkle of paprika (sweet or hot) to your Fried Pumpkin once the sticks are fried, when you salt them.

Tips

For perfect Fried Pumpkin, we recommend carefully checking the temperature of the vegetable oil: it should be very hot, about 160-180 °C (320-350 °F). You can fry any kind of edible pumpkin, and among the best we recommend Mantua pumpkin (zucca mantovana), a sweet Italian squash.

Storage

Fried Pumpkin should be eaten right away: like all fried foods, it really isn’t suited to storing.
