  1. To prepare the Pumpkin Syrup start by slicing a pumpkin, place it in a baking dish and bake it at 400°F (200°C) covered with baking paper until tender.

  2. Now scoop out the pulp from the pumpkin slices, put it in a blender and blend it until it is a nice smooth puree with no lumps.

  3. Now put the water, granulated white sugar, and brown sugar in a saucepan and simmer over a gentle heat until the sugars are well dissolved.

  4. Now add two tablespoons of pumpkin puree, cinnamon powder (or 5 sticks, if you have any available), ginger, a few cloves, a pinch of nutmeg, and mix everything well.

To prepare Pumpkin Syrup you can safely decide whether to bake or steam the pumpkin, the important thing is that you do not salt it and do not add oil or butter. You can also decide if you want to use cinnamon powder or sticks, in this case we recommend using 5-6 sticks.


Pumpkin Syrup will keep in the refrigerator for at least 1 month without any problems.
