Cut it into cubes of the same size and do the same with the potatoes.Put a drizzle of olive oil in a skillet with the leek cut into rounds and the rosemary sprig stripped of its leaves; once the leek has softened, add the pumpkin and the diced potatoes, and season with salt and pepper to taste.Brown everything and add the vegetable broth a little at a time until the potatoes and pumpkin are very soft. Be careful not to add too much broth. When everything is well cooked, remove the rosemary sprig, add a pinch of paprika and a little grated ginger, and blend everything thoroughly with an immersion blender.Whip the fresh cream well (it must not be sweetened at all) and, taking care not to deflate it, add and fold in the Greek yogurt as well. Now put a little pumpkin cream in the cups and, using a piping bag, top it with a nice swirl of the cream and Greek yogurt topping.Finish with a sprinkle of cinnamon and a few oven-toasted sliced almonds, and serve your Pumpkin Cappuccino as the perfect fall appetizer. Alternatively, you can keep the pumpkin cream in the fridge, in an airtight container, for 2-3 days and whip the soy cream for the topping at the last minute.Comments ★ ★ ★ ★ ★ × 5 / 5 You need to enable JavaScript to vote Cancel reply Leave a comment
