Method

  1. To make the Christmas Tree Place Cards, start by unrolling the puff pastry on the work surface. With a pastry wheel, cut the pastry into strips about 1.5 centimeters (5/8 inch) wide.

  2. Fold the strips back and forth, making each fold a little wider as you go, until you get the shape of a Christmas tree, then hold everything in place with skewers. Place the trees on a baking sheet lined with parchment paper, spaced well apart from one another.

  3. Sprinkle with a little Parmigiano and a little Pecorino as you like. If you really love the taste of cheese, feel free to be generous. Bake in a preheated convection oven at 180 °C (350 °F) for about 15 minutes.

  4. Meanwhile, make the Parmigiano balls. Take parchment paper and cut out 6 medium squares. On each square, spread 20 grams of Parmigiano evenly, forming a circle about 15 centimeters (6 inches) across.

Variations and Alternatives

If you like, you can also make sweet Christmas Tree Place Cards: to do so, simply sprinkle them with brown sugar instead of the grated cheeses and set them on a candy base.

Tips

If you want to make bigger Christmas Tree Place Cards, remember that you will also need to make the Parmigiano ball at the base bigger: the ball must always weigh more than the tree, otherwise it will tip over.

Storage

It’s rare for Christmas Tree Place Cards to be left over, but if they are, you can keep them for a day in an airtight container.
