Method

  1. To make the Puff Pastry Apple Roses with Cinnamon, start by washing the apples and cutting them in half; remove the cores and, with a very sharp knife, cut them into thin slices.

  2. Put the apple slices in a nonstick skillet with the sugar, the cinnamon, the juice of one lemon and a pat of butter. Cook over low heat until the apples are soft and the cooking liquid has almost completely reduced; keep in mind that it will take about ten minutes to finish cooking.
  3. Meanwhile, unroll the puff pastry widthwise and cut it into strips about 4-5 centimeters wide and no more than 25 centimeters long.
  4. Spread a little jam on each strip and arrange the apple slices so they overlap slightly, letting the curved edge stick out a little past the pastry (see photo).

  5. When you reach the end of the strip, fold the free edge over the apples, pressing lightly, and roll the strips up on themselves to form roses. Note: for perfect baking, don’t roll the roses too tightly, as the pastry needs room to puff up. Place your Apple and Puff Pastry Roses in a muffin tin (so they keep their flower shape) or on a baking sheet lined with parchment paper, making sure to leave plenty of space between them.

  6. Sprinkle with sugar and cinnamon to taste, then bake at 160 °C (325 °F) for about 50 minutes. Once golden, the little roses are ready; let them cool until lukewarm and serve them to your guests after dusting them generously with powdered sugar.
