Once they are clean, cut them into slices or small pieces.Chop the onion, not too finely, and sauté it in a nonstick skillet with a drizzle of oil. When the onion has darkened, add the mushrooms to the skillet as well. Deglaze them with a splash of white wine and cook until the wine has evaporated.Season with salt, add a pinch of pepper and cook over low heat for another 5 minutes. Once it is rolled up, press firmly on the edge so the pastry sticks to the rest of the roll. With a very sharp knife, cut the roll into slices about a couple of centimeters (3/4 inch) thick and arrange them on a baking sheet lined with parchment paper, spaced well apart from one another.Put a little tomato puree on each pinwheel and sprinkle with a little grated Grana as you like.Bake in a preheated oven at 180 °C (350 °F) for about 20-30 minutes, or in any case until the puff pastry is golden. Once they are ready, take them out of the oven and serve the Pancetta, Mushroom and Grana Pinwheels nice and hot.
