Method

  1. To make the No-Rise Pandoro, start by beating the six egg yolks with the sugar in a mixing bowl using an electric mixer. Finely chop the zest of half an orange, taking care not to reach the white pith, and set it aside; then squeeze the orange juice with a citrus juicer, strain it through a sieve to remove any impurities and collect it in a container.
No-Rise Pandoro, step 1: egg yolks beaten with sugar, orange zest and freshly squeezed orange juice
  2. Now go back to the egg and sugar mixture: while still beating with the electric mixer, slowly drizzle in the vegetable oil, then the juice with the orange zest, the milk and finally the sifted flour, a little at a time so that it blends well with the rest of the ingredients, and mix until you have a thick, smooth and even batter.
No-Rise Pandoro, step 2: oil, orange juice, milk and flour beaten into the egg mixture
  3. In a bowl, beat the six egg whites with a pinch of salt until stiff and, once they are ready, add them to the cream you made earlier. Take care to fold them in gently, mixing well from the bottom up with a kitchen spatula so the egg whites don’t deflate; then add the vanilla baking powder and, still using the spatula, fold it into the rest of the ingredients as well.
No-Rise Pandoro, step 3: stiffly beaten egg whites folded into the batter
  4. Once you have a thick, lump-free batter, pour it into a pandoro mold that you have generously buttered and floured, and bake the pandoro at 175 °C (350 °F) for about 35 minutes. When it is ready, take it out of the oven and let it cool in the mold for about half an hour, then turn it over onto a wire rack and unmold it only when it has cooled completely.

  5. Finally, dust the No-Rise Pandoro with powdered sugar and serve it to your guests. Finally, remember to download our App with exclusive content and fewer ads!
