Run the mixer until you get a firm, smooth dough. If it doesn’t turn out that way, add more flour until you get the right consistency. Shape the dough into a disk, wrap it in plastic wrap and refrigerate for at least an hour. When the resting time is up, roll out the dough with a rolling pin to about half a centimeter thick, then use a star-shaped cookie cutter to cut out as many cookies as possible. Place the cookies on a baking sheet lined with parchment paper, then bake them at 180 °C (350 °F) for 15 minutes.Meanwhile, make the decoration: sift the powdered sugar into a medium bowl. Bring the water to a boil, then pour it into the bowl with the powdered sugar one tablespoon at a time, stirring well. When you have used up all the ingredients, stir well and check whether you need to add more: if the icing is too runny, add more powdered sugar; if it’s too thick, add more water.Take the cookies out of the oven and let them cool completely, then brush the sugar icing over them. Once the icing has hardened, serve the Honey Cookies.
