Mash the pulp with a fork or a spoon to extract the juice, then strain it through a sieve. In a large bowl, beat the egg whites with an electric mixer until foam forms on the surface. At this point, with the mixer still running, gradually add 30 g of the sugar and beat until the egg whites are stiff. Pour the water and the lemon juice into another large bowl. While whisking, gradually add the rest of the sugar and, once it has completely dissolved, fold in the egg whites, taking care not to deflate them. Stir until smooth, then add the limoncello and mix it in with the other ingredients.Pour everything into a wide bowl and put it in the freezer for a couple of hours, or better three. Every 30 minutes, take the mixture out of the freezer and stir it well with a whisk. When it reaches the classic creamy consistency, serve your lemon sorbet in the hollowed-out lemons.
