In winter, and especially as Christmas approaches, we feel more like spending time in the kitchen and making something good for our loved ones. During the holidays in particular, when we have more free time, we love making ourselves a brunch and enjoying the day in our pajamas on the couch.
That’s exactly when we came up with this sort of toast with a frittata heart, which today we’re sharing in a lovely Christmas version: you can serve them at your own brunches, or use them as an appetizer for your next holiday lunches and dinners.

To make them, all you need is a few slices of sandwich bread, also great in whole wheat or seeded versions, some eggs and a few ingredients for flavor: chives, spinach, cheese and also smoked pancetta will give your frittata toasts a different character every time, without much effort.

Among other Christmas appetizers, we suggest trying the Tramezzini Christmas Trees, the Salmon Mousse Canapés and the Filled Puff Pastry Stars, all easy to make and really good.

Method

  1. To make the Frittata-in-a-Hole Toasts, start by getting three bowls and cracking one egg into each.
  2. Chop the chives with a knife and cut the pancetta into fairly small pieces. Put these ingredients, which will give the frittata different flavors, one in each bowl. In the last bowl, add the Parmigiano instead.

  3. Season all three mixtures with a pinch of salt, beat with a fork and set aside.
  4. Lay the slices of sandwich bread on the work surface and, with a cookie cutter of your choice (we chose a Christmas tree), cut a hole in the center of the bread.

  5. Place the slices in a lightly oiled pan, making sure they sit flat against the bottom, then pour the beaten eggs into the holes. Each egg will fill about 4 slices.
