Method

  1. To make the Filled Pandoro, first prepare the Mascarpone Cream: separate the egg yolks from the whites and beat the whites to stiff peaks with a pinch of salt, then set them aside. Add the sugar to the yolks and beat with an electric mixer until pale and frothy, then add the mascarpone and beat everything until you get a smooth, fluid cream. Finally, fold in the beaten egg whites with a spatula in 2 or 3 additions, moving from the top down so the mixture doesn’t deflate.
  2. Take the pandoro and cut it horizontally into slices about 2 cm thick. Spread each layer with the mascarpone cream and place the next slice on top, offset, to create a pretty star pattern. Continue this way until you close the pandoro with the final slice.
  3. Now decorate the cream-covered tips of the slices with the chocolate chips and let the pandoro rest in the refrigerator for at least 1 hour. Finish with plenty of powdered sugar, and your Filled Pandoro is ready to serve. Finally, remember to download our App with exclusive content and fewer ads!

Variations and Alternatives

If you want to flavor the cream for the Filled Pandoro, you can use a vial of rum flavoring, brandy, or another liqueur. If you like, you can also fold some whipped cream into the mascarpone cream to make it frothier and lighter. Finally, instead of the chocolate chips, you can decorate it with amarena cherries in syrup and nuts.

Tips

When cutting the Pandoro, be very careful not to damage the points of the stars or the edges. To make your Filled Pandoro even tastier, try using Homemade Pandoro.

Storage

Filled Pandoro keeps in the refrigerator, well covered, for up to 2 days.
