If you are wondering about what cream you should be using, please note that heavy cream, whipping cream, double cream in the UK, and thickened cream in Australia are good for this recipe. Be sure to choose a cream with a high-fat content as it will help to thicken the sauce.

  1. To prepare Creamy Saffron and Sausages Pasta first bring a pot of water to a boil that you will use to cook the pasta. Meanwhile, remove the casing from the sausage and brown it in a pan with a drizzle of Olive oil. Set it aside.

If you wish, you can replace the heavy cream with the same amount of white sauce. If, on the other hand, you want to tone down the intense flavor of the sausage, we recommend fuming it with half a glass of white wine.


If you should find that the pasta turns out a bit dry as soon as you combine all the ingredients in the pot to mix, add half a ladleful of the pasta cooking water: the starch in it will make the dish even creamier.
