Method

  1. To make the Creamy Red Lentil Soup, take a large bowl, pour in plenty of water, and let the lentils soak for about 20 minutes.
  2. Meanwhile, wash, trim, and cut both the cherry tomatoes and the carrots into small pieces.
  3. Sauté the garlic in the extra virgin olive oil in a large nonstick pot. Add the carrots and cherry tomatoes and keep cooking over low heat for a few minutes.
  4. Drain the lentils and add them to the pot along with the chopped parsley. Cook over medium heat for a few seconds, stirring to combine.
  5. Turn the heat down to the lowest setting, add half of the water, and keep cooking for about 20 minutes, stirring occasionally.
  6. Add the remaining water, season with salt, and cook for another 10 minutes, still stirring occasionally.
  7. Turn off the heat and blend the mixture with an immersion blender until you have a smooth, even cream. Garnish as you like and serve the Creamy Red Lentil Soup. Finally, remember to download our App with exclusive content and fewer ads!

Tips

While the Creamy Red Lentil Soup is cooking, the mixture should stay liquid, otherwise the soup will be too thick when you blend the ingredients.

If you notice that it is very thick, you can thin it with a couple of tablespoons of hot Water. If, on the other hand, the soup is too runny, keep cooking it for another couple of minutes.

Storage

Creamy Red Lentil Soup keeps in the refrigerator for one day in an airtight container. You can also freeze it if you like.
