Method

  1. To make the Creamy Cheese Potatoes, start with the potatoes: peel them, rinse them under running water and cut them into slices about 1 cm thick. Boil the slices in a pot of hot salted water for about 10 minutes, then lay them on a kitchen towel and pat them dry to remove the excess water.

  2. Let the potatoes rest and meanwhile cut the cheeses into cubes, or however you prefer. Take a baking dish, drizzle it with oil and start assembling: begin with a layer of potato slices on the bottom, continue with a layer of the cheeses, then the frankfurters and finally the grated Parmigiano. Repeat until you have used up all the ingredients and, when you reach the last layer of potatoes, top it with slices of mozzarella and more grated Parmigiano.

Creamy Cheese Potatoes, step 3: layered potatoes topped with mozzarella and Parmigiano in a baking dish
  3. Now bake the potatoes: put the baking dish in an oven preheated to 180 °C (350 °F) for about 40 minutes. If the top starts to brown too much, cover the potatoes with aluminum foil and remove it only for the last ten minutes of baking, so the top turns perfectly golden.
  4. When they are ready, take the Creamy Cheese Potatoes out of the oven and let them rest for about ten minutes, until warm, before serving them to your guests. Finally, remember to download our App with exclusive content and fewer ads!

Storage

The best advice is to eat this dish right away and not store it at all. If you do need to, you can keep the Creamy Cheese Potatoes in the fridge in an airtight container for up to a couple of days: remember to reheat them in the oven for a few minutes before serving them again.
