Charlotte is very versatile: it can be served hot or cold and made in many different ways, with pan di Spagna (Italian sponge cake), other sponge cakes, ladyfingers or plain bread, paired with all kinds of fillings. The story of the origin of the name Charlotte is disputed and unclear: some claim it comes from the English “charlet” (popular dishes in 15th-century England), others that it was named in honor of Queen Charlotte (wife of King George III), and still others suggest it was dedicated to Charlotte of Prussia, sister-in-law of Tsar Alexander I of Russia.Charlotte Russe is a variation on the classic Charlotte, invented by the French chef Marie-Antoine Carême. It stands out for its base and lining of ladyfingers and its Bavarian cream filling (you have surely seen it, at least in photos, where it is usually shown with the ladyfingers tied with a colorful ribbon). Charlotte Royale, unlike Charlotte Russe, is made with sponge sheet instead of ladyfingers while the filling stays the same.Charlotte Royale is a truly regal, exquisite dessert: a sweet dome made of sponge sheet spread with raspberry jam that hides a creamy Bavarian cream filling inside.Depending on how you decide to make this cake, you will find it perfect for any occasion. We love serving it during the Christmas season and over the holidays: it is so sumptuous that success is guaranteed. Among other Christmas desserts, we suggest trying the Gingerbread Cupcakes, the Christmas Mince Pies and the Puff Pastry Christmas Tree with Jam and Cinnamon.Ingredients for 8 peopleFor the sponge sheet:70 g of All Purpose Flour100 g of Sugar2 tablespoons of Water hot3 Eggs1 tablespoon of Lemon Juice1 tablespoon of Lemon Peel250 g of Raspberry JamFor the cream:400 ml of Milk150 g of Sugar5 Egg Yolks1 pinch of Salt1 Vanilla Beans350 ml of Whipping CreamCopy Ingredients ListOpen in AppMethodTo make the Classic Charlotte Royale with the original recipe, start by separating the egg whites from the yolks. Beat the yolks with 90 grams of the sugar and the hot water until pale. Then add the lemon juice and zest and the flour, and set aside for now.Beat the egg whites until stiff, adding the remaining sugar one tablespoon at a time, until smooth.Add the beaten egg whites to the first mixture, folding gently from the bottom up so the mixture doesn’t deflate.Pour it onto the baking sheet lined with parchment paper and level the surface into a layer half a centimeter thick. Bake at 180 °C (350 °F) for 8 minutes, take it out of the oven, immediately peel it off the parchment paper and roll it up with the help of a kitchen towel.Soak the gelatin sheets in cold water.Meanwhile, make the filling. Mix the milk, sugar, egg yolks and the seeds scraped from the vanilla bean. Put everything on the heat and, as soon as it comes to a boil, turn off the heat and add the well-squeezed gelatin sheets, stirring to avoid lumps. Transfer to a bowl, cover with plastic wrap touching the surface and let cool.Gently fold it into the whipped cream and set aside. Now take the sponge sheet, unroll it and spread it with the raspberry jam. Roll it up tightly and cut it into slices half a centimeter thick.Arrange the slices in a dome-shaped bowl lined with plastic wrap so that they cover the whole inside surface, leaving as few gaps as possible between them.Pour in the filling, level the surface and refrigerate for at least 4 hours, or until completely set.
