Once it is warm, pour it into a bowl with a tablespoon of sugar, add the yeast and stir to combine everything. In the bowl of the stand mixer, pour the previously melted butter, the sugar, the eggs and a pinch of salt, and mix to combine everything. Add the milk mixture and mix again.Gradually add the flour as well, taking care to add more only when the previous addition is fully incorporated. Once you have added all the flour, knead the mixture for about a minute, adding the raisins too.Oil a large bowl, put the dough in it and let it rise in the oven, turned off with the light on, for about 2 hours, or in any case until it has doubled in volume.Shortly before taking the dough out, mix the cinnamon, the brown sugar and the granulated sugar in a bowl to make the filling. When the resting time is up, take the dough and, using a bench scraper, divide it into 24 equal pieces. Work each piece of dough with your hands until it forms a ball.Roll the balls out lightly with a rolling pin into disks and separate them into groups of four. Line up the four disks in a row, overlapping them slightly and pressing on the edges so they stick to one another.Sprinkle the disks with two or three tablespoons of filling and roll them up into a log. Press lightly so the edges of the dough stick together, then cut the log in half to form two roses.Take a muffin pan, butter it and flour it. Place a rose in each cup and let them rest in the oven, turned off but with the light on, for another 20-30 minutes.Beat the remaining egg in a bowl and use it to brush the roses. Sprinkle with a little sugar and bake in a preheated oven at 180 °C (350 °F) for 30-35 minutes, or in any case until the roses have turned golden.Once they are ready, take the roses out of the oven and let them cool slightly. Gently remove them from the cupcake pan and serve the Cinnamon Raisin Roses.
