Method

  1. To make the Christmas reindeer muffins, start by breaking 120 grams of the dark chocolate into pieces and melting it in a double boiler with the butter; once melted, let it cool slightly.
  2. In a bowl, beat the eggs with the sugar and the vanillin, then add the chocolate and butter mixture a little at a time, still mixing. Add the flour, sifted with the half packet of baking powder, and a pinch of salt to the same bowl; mix until the batter is smooth and free of lumps.
  3. Line a muffin pan with 12 paper liners and fill them two-thirds full with the chocolate batter. Bake in a preheated oven at 180 °C (350 °F) for about 15-20 minutes.

  4. Once baked, let the muffins rest in the turned-off oven with the door slightly open for 5 minutes. Then take them out and let them cool completely on a wire rack.
  5. Now prepare the chocolate for the decoration: melt the remaining dark chocolate in a double boiler or in the microwave. Use it to glaze the cooled muffins.

  6. Before the chocolate sets, press in a small amaretti cookie for the reindeer’s muzzle and top it with a red candy for the nose (stuck on with a drop of melted chocolate). Add the white candies for the eyes, again using chocolate as glue, and use a toothpick to make small drops of chocolate for the pupils. Finally, insert the pretzels to make the antlers of your Christmas reindeer. Finally, remember to download our App with exclusive content and fewer ads!

Variations and Alternatives

Instead of pretzels, you can use melted chocolate to make your reindeer’s antlers.

Draw the antlers on a sheet of paper, place a sheet of acetate on top and trace the antlers with melted chocolate, using a parchment paper cone or a pastry pen. Let them set in the freezer for 10 minutes.

Tips

The chocolate muffins can also be made ahead and decorated at the last minute; just be sure to melt the chocolate for the glaze right before using it. You can make them even richer by stirring chocolate chips into the batter at the end.

Storage

The Christmas reindeer muffins keep for a couple of days under a cake dome.
