Method

  1. To make the Chocolate Chip Panettone, take a medium bowl, pour in the milk, warmed beforehand, and dissolve the yeast in it. Add the malt and 125 g of the Manitoba flour, both sifted beforehand. Mix well with a whisk until there are no lumps left. Then cover the bowl with plastic wrap and let it rise in the oven, turned off but with the light on, for 40 minutes, until the mixture has doubled in volume. Meanwhile, put the chocolate chips in the freezer.
  2. When the dough has risen, put it in the stand mixer fitted with the flat beater. Turn on the mixer and add the rest of the flour, the honey, the sugar, one egg, and finally the salt. Keep mixing until all the ingredients are well combined, then replace the flat beater with the dough hook. Cut the butter into cubes and let it melt slightly. Then add the butter cubes to the running mixer, taking care to add the next piece only when the previous one is fully incorporated. Keep kneading until you get a smooth dough that pulls away from the sides of the bowl. Now shape it into a ball and put it in a bowl, cover it with plastic wrap, and let it rise in the oven, turned off but with the light on, for 90 minutes.
  3. Take the dough and knead it briefly, adding the chocolate chips and mixing well. Transfer the dough to the paper panettone mold and brush the surface with a little liquid cream. Let it rise for another 60 minutes, or until the dough has reached the rim of the mold. Then brush the surface with a beaten egg and bake in a conventional oven at 180 °C (350 °F) for 20 minutes. Take the Chocolate Chip Panettone out of the oven and let it cool before serving. Finally, remember to download our App with exclusive content and fewer ads!

Variations and Alternatives

If you like, you can make mini Chocolate Chip Panettoni simply by using a smaller panettone mold. Or you can replace the dark chocolate with milk chocolate or white chocolate.

Tips

I recommend putting the chocolate chips in the freezer before using them. This keeps them from melting when we add them to the dough and stops them from all sinking to the bottom of the Panettone.

Storage

You can store Chocolate Chip Panettone in food storage bags or in a tin.
