Method

  1. To make the Chicken Breast with Mushrooms, Onions and Pancetta, start by carefully cleaning the mushrooms, making sure to remove any trace of soil. Once clean, slice them and put them in a nonstick pan with half an onion, sliced. Season with salt and pepper and cook over medium heat until the mushrooms are nicely softened.
  2. When the mushrooms are cooked, lay the chicken breast slices on a sheet of parchment paper so that they overlap slightly, pound them with a meat mallet, season lightly with salt and pepper and place the cooked mushrooms and onion in the center. Once the filling is in place, roll up the slices, closing everything into the classic shape of a roll.
  3. After carefully closing it, wrap it in the slices of pancetta, place it in a baking dish lined with parchment paper and bake in a preheated oven at 200 °C (400 °F) for about 50 minutes. During cooking, turn your chicken breast roll several times so the pancetta cooks evenly. When everything is well cooked, take it out of the oven, let it rest for 10 minutes, slice it and serve your Chicken Breast with Mushrooms, Onions and Pancetta, ideally with roasted potatoes. Variations and Alternatives

If you prefer, you can replace the pancetta with speck and, if you like them, add a few cooked chestnuts to the filling.

Tips

If you want to speed up the cooking, pound the chicken slices more so they get nice and thin.

Storage

Chicken Breast with Mushrooms, Onion and Pancetta is best eaten hot, but if you like it keeps in the fridge, tightly sealed, for 2-3 days.
