Method

  1. To make the chestnut dessert cups, start with the chestnuts: rinse them under running water, score them with a knife, then boil them in a pressure cooker for 10 minutes. While the chestnuts cook, chop the dark chocolate and melt it in a double boiler.
  2. Once the chocolate has melted, add the butter and stir with a whisk until everything is well combined, then turn off the heat and set the mixture aside. Drain the cooked chestnuts, peel them while still hot to make the job easier and pass them through a fine-mesh food mill. Put the chestnut meal you obtained in a bowl, add the chocolate and the sugar and mix everything with a spatula until well combined.
  3. Work the mixture with a whisk and finally add the rum. Stir well to combine, then transfer it to a piping bag without a tip and fill the glasses with the cream. Be sure to leave a little space below the rim of each glass and, once you have filled them all, cover them with plastic wrap and let them rest in the fridge for at least 1 hour.
  4. Meanwhile, whip the cream with the powdered sugar in a bowl. When ready, decorate the cups with a swirl of cream, which you can easily pipe with a piping bag fitted with a star tip. Your chestnut dessert cups are now ready to serve. Finally, remember to download our App with exclusive content and fewer ads!

Variations and Alternatives

To make your chestnut cups even tastier, decorate them with dark chocolate shavings or pieces of chestnut.

Tips

If you have trouble mashing the chestnuts into a purée, add a splash of rum or water to soften them and make them easier to work.

Storage

The dessert cups are best eaten right away. You can, however, keep them in the fridge for up to one day, covered with plastic wrap.
