Chantilly cream is a sweet cream at the heart of pastry-making all over the world: really quick and simple to make, and good enough to serve on its own as a spoon dessert. Not to be confused with Pastry Cream or Diplomat Cream, today’s cream is used to decorate wonderful cakes such as the Saint Honoré. Whatever dessert you decide to use Chantilly cream for, its simple yet exquisite flavor will always win everyone over.

Made with heavy cream and powdered sugar and flavored with vanilla, this cream was first created in the 17th century by François Vatel at the French château it is named after: from then on it spread quickly around the world, becoming one of the best-loved basic preparations.

The Mille-Feuille with Chantilly Cream and Strawberries is a dessert not to be missed if you are wondering how to use Chantilly cream and want something original to treat your guests. Today, though, we want to share with you both our version and the original one for making Chantilly cream.

Method

  1. To make the Chantilly cream, pour the heavy cream, cold from the fridge, into a bowl that has been chilled in the freezer for twenty minutes. Split the vanilla bean, scrape out a quarter of the seeds and add them to the bowl. Beat with an electric mixer until the mixture is pale and foamy.
  2. Sift the powdered sugar directly into the bowl and beat again until the cream is fully whipped. Your Chantilly cream is now ready to enjoy or to use in your desserts. Finally, remember to download our App with exclusive content and fewer ads!

Variations and Alternatives

You can add a whole vanilla bean with its seeds to the cream, cover and let it rest overnight in the fridge, then strain the mixture and continue with the recipe by adding the powdered sugar: this gives you Chantilly cream made the original way.

Tips

Instead of the vanilla bean, you can use a packet of vanillin powder.

Storage

Our advice is to enjoy Chantilly cream right away, or to make it only when you are ready to use it. However, you can keep it well covered in the fridge for up to one hour.
