Method

  1. To make camy cream, start by beating the mascarpone with the well-chilled condensed milk, using an electric mixer for about 10 minutes until smooth and even.
  2. At the same time, in a separate bowl, whip the cold cream until firm and velvety, without sugar.
  3. Gently fold the whipped cream into the mascarpone mixture with a spatula, using upward strokes from the bottom, so it does not deflate and the cream stays airy.
  4. Transfer the camy cream to a piping bag fitted with the tip of your choice: it is ready to use right away to fill, decorate and garnish your favorite desserts. Finally, remember to download our App with exclusive content and fewer ads!

Variations and Alternatives

You can customize camy cream in many ways: make a chocolate version by adding melted (cooled) chocolate to the mascarpone, or use cocoa powder. Make a Nutella camy cream by adding a few spoonfuls of hazelnut spread, or a caramel version using caramelized condensed milk. You can also enrich it with jam, coffee extract, pistachio or ground cinnamon, to your taste.

Tips

The key to success with this recipe is that all the ingredients are very cold: put the mascarpone, cream and condensed milk in the fridge at least a couple of hours ahead. If you like, you can flavor it by adding the seeds of 2 vanilla beans while you make it. Camy cream has a consistency that makes it ideal for precise piped decorations or for a soft filling between cake layers.

Storage

Once made, store the camy cream in a tightly closed piping bag in the fridge for up to 2-3 days. Freezing is not recommended.
