Method

  1. To make the Brie and Pear Millefeuille, first unroll the puff pastry and prick it all over to keep it from puffing up during baking. Cut the puff pastry with a square cutter and arrange the 12 squares on a baking sheet lined with parchment paper.

  2. Pre-bake the puff pastry squares in the oven for 5 minutes at 200 °C (400 °F). Meanwhile, cut the brie into thin slices, then peel the pear, slice it too and remove the core with the seeds.

  3. After the 5 minutes of baking, take the puff pastry squares out of the oven and let them cool slightly, then assemble the millefeuille: start with a square of puff pastry, lay a slice of brie and a slice of pear on top and close with another square of puff pastry. Make a second layer the same way and you’ll have 4 millefeuilles.

Variations and Alternatives

You can customize the Savory Millefeuille with whatever filling you like best: speck and brie, gorgonzola and pears, cooked ham and provola. Or you can add to the brie and pears a few walnut halves for an extra touch of flavor.

Tips

For this Brie and Pear Millefeuille recipe, use a firm pear that isn’t too ripe, otherwise it may fall apart during baking and release too much liquid, which would make the pastry soggy.

Storage

Brie and Pear Millefeuille is best eaten right away, to enjoy the flaky pastry and the creamy melted brie and pears at their best. But if you have leftovers, store them in the fridge, in an airtight container, for 1-2 days and reheat them in the oven for about ten minutes before eating.
